Tasting: Pale gold color, shiny and limpid. The nose is fine and expressive, a floral bouquet, discreet milky and woody aromas. A palate of great finesse, ample and fresh, with great persistence.

Soil : loess

Climat : semi-continental with Mediterranean influence.

Vines : 80 % marsanne 20% roussanne planted in 1936

Harvest : manual, whole harvest pressing followed by selection of the best grapes. Followed by a natural settling of 24 hours.

Vinification : fermentation in 225l barrels and aging for 6 months in barrels.

Second fermentation  : march 2014.

Dosage of "liqueur d'expédition" : "Brut Nature"

Yield : 35hl/ha

Natural alcoholic degree : 12 % vol

Alcoholic degree after the second fermentation : 13 % vol

Food and wine pairings: Small fingerling potatoes with foie gras and caviar, Nage of scallops with langoustines, Pheasant with walnuts and dried apricots
